For cooking lab today, we made fried meatballs with a sweet and sour sauce. Important points to remember: Deep-fry the meatballs twice. Fry them at a lower temperature first in order to cook the meatballs, then turn up the heat and fry the balls again in order to give it a crispy skin. Also, since sweet and sour sauce is very thick, a lot of starch is used. Immediately after adding starch to the sauce, mix well to prevent lumping, then bring to boil in order to activate the gluten or ''thickness''.
